Trader Joe's is like crack

Trader Joe's is one of my most favorite grocery stores of all time. I remember my sister living by the one in La Crescenta we now lovingly refer to as the "mini market"because of it's location in a small strip mall. I remember her buying granola and other yummies from there when my now 29 year old niece was a baby. They have since branched out all over the country including 3 here in Charlotte NC. Not bad for little market that started in Pasadena CA. They have honest to good food at the most reasonable prices. They have lots of organic items and their stuff is all natural. When we moved out here my darling sister would pack me a care package of my favorite foods for Christmas & my birthday before there were TJ's here. I once went on a business trip to Boston for a wine conventtion and there was a TJ's across the street from my hotel. The gals I shared my room with thought I was nust stuffing my suitcase with loaves of sourdough bread and cereal & dressings etc. That trip cost me an extra $100.00 at TJ's and then a $50.00 overweight charge from the airlines for my luggage! Anyway you get the point right? Well, they used to have the most decadent double chocolate chip pancake mix. I mostly only made it for special occasions like Valentine's Day when I added fresh strawberries and homemade whipped cream. Once I had 2 boxes and when they ran out, guess what? They, TJ's discontinued it! They do that sometime ya know that's why my husband calls them crack. They hook you on it and then stop making it. Well folks, I found a recipe online that is excatly like what we used to make from a box. Add some fresh berries & some homemade whipped cream and you will be a master in the art of feeding the soul. If you have any leftovers, pop them into a freezer bag and freeze. Microwave or pop them in the toaster oven to reheat. Seriously, enjoy!
