Tonight on the menu, crispy black bean taco's. Let me start by telling you to do yourself a huge favor and double the recipe. One recipe is not enough for a family of 3 adults. Our kids don't eat a lot because we make em' spicy! Although Liam loves them sans the Tapatio sauce. Anyway what you have leftover stick into the toaster oven for lunch the next day. I also add a minced jalapeno into the mashed beans. I serve with a version of guacamole I will post here.
Guacamole
1 ripe avocado
1 tsp. fresh lime juice (or more to taste)
1 tbs. chopped cilantro
1 tbs. chopped green onion
1 minced garlic glove
salt & pepper to taste
Mash avocado and all other ingredients together in a medium bowl. Eat with all of you favorite Mexican dishes!
A must have with the crispy black bean tacos!
