Eggnog Pancakes

I do not dig eggnog...but these pancakes I promise will bring some magic to your holiday without the nog.


Eggnog Pancakes
 1&1/3 c all purpose flour
1/4 c sugar
1 tsp baking soda
1/2 tsp. salt
1/4 tsp. ground nutmeg    *** I usually just use 3/4-1 tsp of pumpkin pie spice instead of these seperately***
1/8 tsp ground cloves
1& 1/2 c. refrigerated eggnog
1 lg egg slightly beaten
1 tbsp. vegetable oil
butter & syrup (optional for serving)

Combine the first 6 ingredients in a large bowl & whisk to combine.
Combine the eggnog, egg, & oil in a medium bowl & whisk.
Add eggnog mixture to the four , stirring until dry ingredients are moistened.

It says lightly grease hot griddle.  I have non stick so I do not. Cook until the tops are bubbles & edges are cooked.

Cooled pancakes can be frozen between wax paper & stored in air tight container (but NEVER last that long at my house ) LOL! Freeze up to 1 month. To reheat, place pancakes in single layer & bake at 325 for 10 minutes.
