Citrus & avocado salad with pine nuts & goat cheese with citrus honey dijon vinaigrette


 I have made this for the last 2 Easter dinners and always with rave reviews. I like to use Ruby Red grapefruit but blood orange or Cara Cara oranges would be beautiful in it as well.

1package of spring salad mix
1 avocado
1-2 large grapefruits
Chevre cheese (I get mine at Trader Joe's but other specialty markets will have it)
1/4 c of pine nuts

For the vinaigrette
1/4 c fresh grapefruit juice
1 tbsp Dijon mustard
 1 tsp Honey
1/2 tsp salt 
1/4 tsp fresh ground pepper
6 tbsp Extra virgin light tasting olive oil

On 4 plates divide salad mix and sprinkle pine nuts over the top of each. Peel grapefruit, segment and remove any seeds and membranes or seeds and divide sections between plates. Peel, slice and remove seed of avocado and add slices to top of each salad. Using a fork scrape crumbles of Chevre on top of each salad.

For the vinaigrette
In a bowl whisk the first 5 ingredients and gradually add the oil by whisking until combined. Drizzle over each salad and serve.
