I have been waiting on the verdict on the chicken enchilada's

I made chicken enchilada's the other night for dinner. Actually, I made 2 kinds chicken & cheese for me. Cooking for me is not an exact science. I take what I have and create, so it is hard for me to write down a recipe. I will post it next but feel free to rewrite your own version. I think that is what makes up a great cook adaptation! Today I had my first pumpkin spice pancakes of the season. I didn't make them though, my husband and our youngest went out for a "date" breakfast after we dropped our other son off at preschool. I have a great recipe for those so I will add that later in the week sometime. Enjoy the enchilada's hope they add a little bit of spice to your dinner. Ole'!
