Here is a bonus since I didn't add a recipe yesterday
Here it is autumn already. I have to admit, I sometimes pick up a quick rotisserie chicken from the grocery store if I don't have the time or the inclination to produce a quality meal. On Sunday's there are on special at one of the store's for $4.99, add a few homemade sides and viola..dinner is served! It's what I make with the leftovers that is fun. Tonight the menu is individual chicken potpies. This is my own recipe since if you don't already know this about me, I am a vegetarian. My family however, is not. But I couldn't tell you what went into a potpie so I had to wing it. My husband who I am forever trying to impress with my culinary creations says it is THE BEST potpie. It is easy and you can keep the ingredients on hand so whenever you have some leftover rotisserie chicken you can reinvent it into a yummy potpie!
